Squirrel hunting season is here, and we want to help you put your game to good use! If you’re looking to step out of the box and try something different, we have just the thing. Blackened Squirrel and Grits is a recipe that combines harvested squirrels with a classic Southern delicacy — grits. Here’s how to bring it to life.

Ingredients:

  • 2 or more whole-cleaned squirrels
  • Your favorite blackening seasoning
  • Garlic powder
  • Cayenne powder
  • 3 cups of cooked grits
  • 2 tbsp bacon grease
  • 1/4 cup of shredded sharp cheddar

Instructions:

1. Simmer the squirrels in water until the meat can be picked off the bone. If you have a pressure cooker or Instant Pot, cook squirrels for 3 to 5 minutes until up to pressure.

2. Prepare the grits according to package directions. Add shredded cheese to every cup of cooked grits. Add garlic and cayenne powder to taste.

3. Carefully separate the squirrel meat from the bones and sprinkle a light coating of the blackened seasoning on the meat.

4. Heat the bacon grease in a pan over medium heat. Add the seasoned squirrel meat and sauté until it browns on the outside. The bacon grease will add a fantastic richness and depth of flavor.

5. Sprinkle the squirrel over the cheese grits and serve.
